At the Citrus & Sage Espresso Bar ‘and Cultural
Destination’ in downtown Logan, there is a small taste of French street
fair. This enterprise was born out of
love (to learn about its genesis go to: Crepes
for a cause - The Herald Journal: Features), and serves a selection of
sweet and savory crepes, fresh to order.
And they are excellent!
The Crepery is a small corner counter with a very simple
setup. A couple crepe grills, some fresh
crepe batter, and a selection of ingredients in a refrigerated table. There are crepes to satisfy any craving
throughout the day, and are substantial enough to serve as a meal. Half of the fun is watching the crepes being
made. It obviously involves a learned
skill and a supple wrist. These are
absolutely fresh.
For the uninitiated, a crepe is a thin pancake of sorts, in
which various savory or sweet ingredients can be folded. Most of our exposure to crepes comes in the
form of the sweet, syrupy, strawberry filled crepes served at breakfast in
pancake houses. The Crepery introduces
us to crepes on a more authentic scale with a variety of filling mixtures to
please any palate. Some of these are
very basic and rely on the taste and texture of the crepe itself, like ‘The
Minimalist’ with just butter and sugar.
Others are built up like a warm sandwich, with pesto, parmesan, smoked
turkey, and roasted red pepper, like the ‘Pepe le Pesto’.
If you are fortunate enough to live in the area, seek this
place out. If not, make the drive up
Logan Canyon. It is beautiful and there
is a warm crepe to die for on your way back down the hill. .
